I baked some miniature pumpkins only to find they taste more like acorn squash than pumpkin. Here I stuffed them with black beans, corn and peas. I actually did these as a classroom snack. The combination of black beans might have been too much. For most of the two-year olds, corn and peas would have been enough.
I would do these again for a party or potluck…maybe with pumpkin risotto.
